German knives (Wusthof, Henckels, ZWILLING) are heavier, thicker, and more durable great for heavy duty tasks like breaking down chicken or chopping hard vegetables. Japanese knives (Shun, Global, Miyabi) are lighter, thinner, and take a sharper edge ideal for precision work and delicate cuts. Most home cooks do well with either; German knives are more forgiving for beginners.
