Do silicone baking mats replace parchment paper?

For most baking tasks, yes. Silicone baking mats can replace parchment paper for cookies, roasting vegetables, baking pastries, and more. The exceptions are tasks where you need to wrap food (like baking en papillote), line oddly shaped pans, or create parchment cones for piping. For standard sheet pan baking, a reusable silicone mat is both cheaper and more environmentally friendly over time.
