Should I use a wooden or marble rolling pin for pie crust?
Marble is superior for pie crust and any butter based dough. The naturally cool surface keeps butter from melting, which is critical for flaky pastry. You can even chill marble in the fridge before use. Wood works fine too just make sure your dough and kitchen are cool. If you primarily make pie crusts, puff pastry, or croissants, invest in marble.
