Is a 75% layout too small for everyday work?

For most people, no. A 75% layout keeps the function row and arrow keys, which are the most commonly needed keys beyond the standard alpha block. You lose the number pad and some navigation keys (Home, End, Page Up/Down), but these are accessible via function key combos. If you do heavy data entry with numbers, you will miss the number pad consider a separate USB numpad instead.
